Why not treat yourself this weekend to Baked Eggs with Chili Tabasco Beans for Breakfast!

Ingredients:
Half a tin of baked beans
2 eggs
1 cup spinach
Half tsp chili flakes
1 small tomato (chopped into chunks)
Dash of Tabasco
1 tbsp fresh parsley (chopped)
Knob of butter
Salt and pepper
Method:
Preheat oven to 180’c, Grease two ramekins and layer the bottom of each with spinach and season with salt and pepper. Add a wee bit of butter.
Heat beans gently and add the tomato, Tabasco and chilli. Mix through and layer in ramekin.
Break and egg on top and sprinkle with salt and pepper.
Bake for about 10 minutes, sprinkle with fresh parsley and enjoy!
