30 ml of Club Soda Water
6 Keelings strawberries
4 O’Hanlon Herbs basil leaves
30ml of Sugar Syrup (see method)
40ml of Golden rum
30ml of lime juice
For the Sugar Syrup.
In small saucepan, on a gentle heat, slowly dissolve 100ml of sugar in 200ml of water. Ensure sugar is completely dissolved. (About 4-5 minutes). Allow to cool completely.
For the Strawberry Basil Mojito
In a large tumbler glass or recycled jam jar, mash the strawberries with basil, lime juice and simple sugar syrup. Add rum. Club Soda Water. Top with crushed or cracked ice and stir well. Garnish with basil or strawberry. Sip with a straw if using the jam jar!
