This Chicken in a hurry pasta dish is easy to make and ideal for mid week meals.
- 1 tbsp olive oil
- 40g Avonmore butter
- 400g chicken breast fillets diced
- 440g penne pasta
- 4tbsp fresh basil pesto
- 150ml Avonmore Fresh Cream
- 300g Avonmore sour cream
- 14 vine cherry tomatoes cut in halves
- 2 tbsp toasted pine nuts
- Freshly grated parmesan shavings
Optional: 100ml of good quality balsamic vinegar mixed with 2 tbsp of brown sugar and reduced to a syrup.
Heat the oil and butter in a large frying pan over a medium- high heat. Add the chicken and cook for 8 minutes or until just cooked. Remove from the pan, cover and keep warm.
Add the cream and the sour cream to the pan and reduce by a ⅓. Stir in the basil pesto & remove from the heat. Meanwhile cook the pasta in large sauce pan of boiling water. Drain well. Add the pasta back to the saucepan, pour over the sauce, add the chicken and reheat. Once hot, add the cherry tomatoes, season with salt and ground black pepper and serve into warmed serving dishes. Finish with fresh parmesan shavings and the toasted pine nuts. Drizzle around some of the balsamic syrup (optional) and serve.
