Healthy Egg and Salmon Salad

We’re  trying to be healthy just like everyone else. So we set the challenge to use as many Love Irish Food ingredients to make a super healthy salad this week. This is a filling and healthy recipe using  eggs, fish and salad. Perfect if prepared ahead for lunch or equally eaten warm in the evening time.

Ingredients

Salad  2 Atlantis Salmon Cutlets (Bones removed) 4 Golden Irish eggs. Lettuce leaves Tomatoes Dressing 2 tablespoons of Newgrange Gold Camelina Oil Juice of 1 lemon 1 clove of Gairleog Irish Garlic (crushed)

Method

1.  Quarter fill a deep wide pot or pan with water and bring to the boil. Season with a pinch of salt and pepper.  Place the salmon cutlets into the water. And reduce the heat so that the water simmers gently. Cover with a lid and cook for ten minutes. Check  with a knife that the salmon is cooked through and is no longer pink in colour. Allow to cool slightly and break into chunks. 2 . Meanwhile , follow this step-by-step guide to the perfect boiled egg.Remove the shells from the eggs and cut in two. 3. Wash and dry the salad of your choice. 4. Combine the camelina oil, lemon juice, and crushed garlic to make a healthy dressing 5. Arrange all the ingredients together in a large bowl.  Drizzle the dressing over the salad.
