120gms/4 ozs bread crumbs
120gms/4 ozs self raising flour
120gms/4 ozs Avonmore butter
3 tablespoons Folláin Marmalade
2 Golden Irish eggs
Mix dry ingredients. Rub butter in with your fingertips. Add 2 tablespoons marmalade, & beaten
Take a greased bowl and put 1 tablespoons loose marmalade in the bottom. Add wet ingredients
and cover tightly with foil or lid. Steam for 2 hours. Remove from Bowl. Place on a warmed plate
and sprinkle with a little caster sugar.
2 tablespoons of Folláin Marmalade
I dissolved t-spoon of cornflour or arrowroot powder (to thicken)
Place marmalade and water in saucepan. Bring to a simmer and dissolve marmalade. Add the blended cornflour/arrowroot powder to thicken. Serve warm with the pudding. Add a little whipped cream to the side.
