Fresh from the fields. On a warm summer’s evening try this tantalizing recipe for new potatoes. An ideal accompaniment for BBQ, roast or grilled meat and fish. We recommend a nice glass of cold white wine and putting your feet up.
Ingredients:
750 g of new baby potatoes
100 g of Crowe’s rasher, chopped
Sea Salt
1 bunch of O’Hanlons Herbs Fresh Parsley chopped.
30g of butter
2 tbsp of Newgrange Gold Rapeseed Oil
Method:
Cook the potatoes:
Wash the potatoes and place in a saucepan. Cook for 10 minutes until the potatoes slip off a sharp knife. Strain the potatoes and set aside.
Cook the bacon:
Meanwhile, in a large frying pan, heat the oil and butter and fry the bacon.
Mix all ingredients together:
Toss the potatoes in the bacon and cooking juices. Season generously with Simplee Seasonings Fresh Herb Sea Salt and sprinkle with fresh parsley.
Serving suggestion:
Grilled Irish lamb chops , Ballymaloe Relish and a nice glass of wine.
