8 slices Country Style Black Pudding
2 Keelings Cooking Apples – peeled, cored and sliced
30g Avonmore Butter
1 tablespoon sugar
2 tablespoons of Newgrange Gold Rapeseed Oil
Ballymaloe Honey and Mustard Dressing
1. Peel, core and slice the apple into eights. Melt the butter in a frying pan. Fry the apple pieces over a medium heat, stirring frequently, for 2-3 minutes. Add the sugar and a drop of water and cook for a further 4-6 minutes or until softened and slightly caramelized.
2. Cook the Country Style Black Pudding as per cooking instruction. Usually, 2-3 minutes on either side.
3. Assemble the black pudding and apples on a plate. Drizzle generously with Ballymaloe Honey and Mustard Dressing. Serve with a spoon and let people help themselves.
