Chimac
Chimac is a true love story — a sticky, chaotic one powered by obsession, infatuation, and a deep love of food and flavour. It all began with a trip to South Korea, where we (Sofie Rooney and Garret FitzGerald) fell hard for “Chimaek” — the iconic Korean combo of fried chicken and beer.
That first bite of crispy, crunchy chicken changed everything.Back in Dublin, we couldn’t stop thinking about it. After years of frying, testing, and obsessing, we opened our first restaurant in 2019, serving free-range fried chicken with bold, punchy Korean-Irish fusion flavour.
In 2021, we started bottling the same Great Taste Award-winning sauces from our kitchen, so consumers can drizzle, dunk and devour at home.
What started as a food-fuelled obsession is now a full-blown flavour mission — from Seoul to Dublin, from our restaurant to your table.
